The Magpies, who will be led by Jason Tindall and Graeme Jones whilst head coach Eddie Howe continues his recovery after being diagnosed with pneumonia, will be targeting a third consecutive Premier League away win when facing Unai Emery's Villans and this will be the third time Gillett has officiated a fixture involving Newcastle this season.
The Australian official, who became the first person born outside the British Isles to referee a Premier League game after overseeing Newcastle's 1-1 draw away at Watford during the 2021/22 campaign, took charge of the Magpies' 1-1 draw against Manchester City in September and booked eight players that day at St. James' Park, including Fabian Schär, Joelinton, Bruno Guimarães and Sandro Tonali.
The 38-year-old was the man in the middle for Newcastle's 4-3 home win against Nottingham Forest in February and awarded a penalty to the hosts, converted by Alexander Isak, as well as booking five players, including United defender Tino Livramento.
